FLATS ROASTING CO.
Matte kraft coffee bag on a steel workbench beside an open roaster drum, roast date stamped in burnt orange
LATEST ROAST: MONDAY, JULY 27, 2026. SHIPS SAME DAY.

We roast for the coffee, not the counter culture.

Locked roast curves, repeatable cups, tasting notes a normal palate can verify. The roast date is printed on every bag because that is the only freshness claim that means anything.

THE COFFEE

Six coffees. Sold on spec.

Origin, process, three notes, price. That is everything you need to pick a coffee. If a bag needs a story to sell, we do not stock it.

PROCESS

Repeatable is the whole job.

Every batch is 12 kilos on a Probat P12 drum. Charge temp, gas, and airflow are logged against a locked curve, and first crack gets timestamped on every single batch. If a batch drifts more than 15 seconds off its reference curve, it does not ship. It becomes our shop coffee, which is a decent consolation prize.

We cup every roast day. Not ceremonially. Two people, blind, against the last three batches of the same coffee. If the notes on the bag stop being true, we fix the roast or rewrite the bag.

  • 12 kg batch size
  • Probat P12 drum
  • First crack logged, every batch
  • Cupped blind, every roast day
